Limited Edition Specialty Coffee
Our specialty microlot crop from Mastercol in Colombia in the northern region of Narino bordering Ecuador. Mastercol have partnered with Asociacion Ecoterra cooperative to select the finest coffees these smallholder farms have to offer.
Colombia offers a range of microclimates that Narino is prized for by producing smooth coffees with high sweetness and citrus notes. The 0.65 hectare farm where these beans are grown is at an altitude of 1,650 masl to 2,000 masl.
Cherries are carefully handpicked and are then processed by the growers before undergoing a first light fermentation for 12 to 72 hours. They are then pulped and the beans are again fermented from 24 to 120 hours. After the second fermentation the parchment is washed in clean water to be laid on patios and dried in the sun. The parchment is raked at regular intervals ensuring even drying which takes approximately 8 to 15 days.
The cup profile from this microlot is truly exquisite with an incredible floral taste that lays heavily across the palate with a truly delightful sensation of spiced ginger and finished off with a delightful hit of juicy raspberry.
